I’ve been asked to share the recipe for my Boilermaker Ale. No problem. Happy to do it. In fact, I’m brewing up another ten gallon batch today.
Fair warning, this is a high octane ale. It’s got a seriously high gravity (around 11% alcohol) and is not for the inexperienced beer and ale drinker. If you’re a boilermaker/alcoholic… you’ll like this ale a lot.
Mash in a ten gallon mashing tun for 90min. at 150deg.:
17 lbs. Belgian 2-row Pilsner malt
.5 lb 20 lovibond crystal malt
.25 lb Belgian Cara-Vienne malt
.25 lb Belgian aromatic malt
Transfer wort to boil pot and start a 90min. boil adding:
1 oz. Cascade or Centennial hops
1 lb. white table sugar
With 15min. left to go in your 90min. boil add:
1 oz Styrian Goldings hops
.5 tsp ground coriander seeds
1 tsp Irish moss
With 5min. left to go in your 90min. boil add:
.5 oz Styrian Goldings hops
.5 tsp ground coriander seeds
1 tsp sweet orange peel
Cool the wert quickly, strain and transfer to primary fermenter.
Add Wyeast’s 3787 Trappist high gravity yeast.
You may want to transfer to a secondary fermenter after about a week. Or, when the fermentation starts to settle down.
***VERY IMPORTANT INFORMATION FOR NOVICE BREWERS***
This recipe undergoes an extremely vigorous fermentation! Regular airlocks WILL become clogged resulting in a very sticky and messy explosion! Use of a blowoff tube is highly recommended!

Meanwhile, while I’m waiting for my grain to mash… Lets watch well endowed girls run down stairs.
